The original Jasper Coffee store, on the notorious Smith Street in Collingwood Melbourne, opened way back in 1989, long before artisan coffee meant anything to most people. Founders Merilyn and Wells came from an art background and were determined to change the coffee world with a new approach to sourcing unique and interesting coffees, raising the taste standards to that of gourmet food and delicate wines.

Each blend of Jasper Coffee is a flavourful work of art, crafted with a unique narrative and taste profile, designed to enhance a mood or moment in time. The single origin selection is second to none with a wide range of coffees to explore, all with a distinct characteristic brought out by varietal, terroir and roasting profile.

Family legacy thrives as Jasper, the son of our founders Merilyn and Wells, has recently taken the helm of the business. He, together with his partner Zoe and their son Felix, carry forward the tradition into a promising future.
