Summer Tomato, Herbed Feta & Wild Rice Salad
Ingredients
100g soft feta
80g natural yoghurt
¼ cup fresh herbs (basil, mint, dill – chopped finely)
1 tbsp red wine vinegar
1 tbsp olive oil
2 tsp lemon juice
600g large heirloom or ripe tomatoes (sliced)
350g cherry tomatoes (halved)
½ cup cooked wild rice
100g pickled onions
Method
Mix feta, yoghurt, and herbs until smooth.
Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
Arrange sliced tomatoes on a platter, top with cherry tomatoes and wild rice.
Add dollops of herbed feta mixture and scatter pickled onions.
Garnish with extra herbs, drizzle with dressing, season to taste — voila!
