Our favorite time of the year! Hello Christmas, beach days, festive celebrations, friends, family, sunrise and sunset walks, BBQs — which all call for SALADS!
What better way to enjoy something fresh, cool, crisp, colorful, full of flavour, and packed with nutrients? Salads are the most valuable player during those scorching summer months.

Australian summer runs from December to February, bringing a bumper crop of juicy, fresh produce that’s perfect for salads.

Summer Tomato, Herbed Feta & Wild Rice Salad
Ingredients
100g soft feta
80g natural yoghurt
¼ cup fresh herbs (basil, mint, and dill – chopped finely)
1 tbsp red wine vinegar
1 tbsp olive oil
2 tsp lemon juice
600g large heirloom or any ripe tomatoes (sliced)
350g cherry tomatoes (halved)
½ cup cooked wild rice
100g pickled onions
Method
Combine feta, yoghurt, and herbs in a bowl and mix until smooth.
In a small bowl, whisk together olive oil, lemon juice, and salt and pepper to taste.
Arrange the large sliced tomatoes on a platter. Top with halved cherry tomatoes and scatter over the wild rice.
Dollop with the herbed feta and yoghurt mix, and scatter over pickled onions.
Decorate with extra basil, mint, and dill. Drizzle over the lemon and olive oil dressing, season to taste — voila!
