THE MO SUPERFOOD SALAD

Make Easter Nourishing this year with the secret MO Superfood Salad - our customers favourite, straight from the MO Cafe!
INGREDIENTS
∙ 2 cups of organic spinach leaves, chopped
∙ ½ cup of organic red cabbage, shredded
∙ 2 cups of organic dinosaur kale, shredded
∙ 1 cup of organic quinoa, cooked
∙ ½ medium organic broccoli, chopped into florets
∙ 1 medium organic red capsicum, chopped
∙ 1 small organic granny smith apple, chopped into cubes plus thin slices for garnish
∙ ⅓ cup of Harvestime organic pomegranate seeds
∙ ¼ cup toasted slivered almonds
∙ 2 tbsp Mindful Foods hemp seeds
FOR THE DRESSING
∙ ¼ cup extra virgin organic olive oil
∙ 3 tbsp organic lemon juice
∙ 2 tbsp organic maple syrup
∙ 2 tbsp organic dijon mustard
∙ pinch of cayenne pepper
∙ celtic salt and pepper to taste
METHOD
Place all ingredients for the dressing into a mason jar, shake until mixed completely.
Add all salad ingredients into a large bowl, toss to combine and pour as much dressing as you like onto the salad, mixing as you go to coat everything.
Serve and Enjoy!
