MEDITERRANEAN INSPIRED SHAKSHUKA

Enjoy this Winter warming breakfast, Mediterranean Inspired Shakshuka straight from the MO Wholefood Cafe kitchen recipe book.
Serves 6
INGREDIENTS
- 1 brown onion, finely diced 
- 1 red capsicum, diced 
- 1 400g tin of diced tomatoes 
- 4 eggs 
- 1 tablespoon tomato paste 
- ½ teaspoon ground cumin 
- ½ teaspoon whole cumin seeds 
- 1 teaspoon smoked paprika 
- 1 teaspoon olive oil 
- Salt and pepper 
- Sour cream or aioli to garnish - *if you do not have an oven proof frying pan, transfer into a baking dish before cracking the eggs for a similar (still beautiful) result. 
METHOD
- Preheat oven to 180ºc. 
- In an oven proof fry pan* heat olive oil over medium heat, add onions and capsicum and fry until the onion has started to turn translucent. 
- Add spices and stir for a minute to allow them to become fragrant, before adding the tomatoes and tomato paste. Allow mixture to come up to temperature, until the sauce is bubbling a little. 
- With a large spoon, pull away an area of sauce in 4 sections of your pan and crack an egg into each space. 
- Place oven proof fry pan in the oven and allow to bake for until the egg whites are cooked through. 
- Serve with dollops of sour cream or aioli, and thick cut toast, and a sprinkling of whole cumin seeds.
