MO KITCHEN RECIPE:
QUINOA PORRIDGE

Take a sneak peek at a new recipe coming to the MO Ipswich & Rocklea Cafes this Winter with our Winter Warming Quinoa Porridge! This recipe is quick, easy and super filling - makes two serves perfectly and is a current staff favourite.

INGREDIENTS:

  • ½ cup uncooked white Quinoa

  • 1 can (400ml) Coconut Cream

  • 2 tsp Maple Syrup (or to taste)

  • 1 tsp Cinnamon powder

  • splashes of water if needed

  • COYO Yoghurt (for topping)

  • Fresh Fruits (for topping)

METHOD:

  1. In saucepan, combine quinoa, milk, maple syrup and cinnamon.

  2. Bring to a boil, then reduce heat and simmer quinoa until cooked (approx. 12-15 minutes). And splashes more water if needed to reach desired consistency.

  3. Divide quinoa porridge between two bowls and top with desired toppings we used organic fresh raspberries, poached pears, COYO coconut yoghurt, maple syrup, organic cacao nibs and toasted coconut.
