BLUEBERRY BAKED OATS

Indulge in a delightful and nutritious breakfast with this easy-to-prepare Blueberry Baked Oats recipe. Ideal for those busy mornings or as a make-ahead option for the week, this dish combines the wholesome goodness of oats with the sweet burst of blueberries, providing a perfect balance of flavours and essential nutrients.
INGREDIENTS:
500ml Almond Milk
200g Organic Rolled Oats
2 tbsp Almond Butter
1 tsp Baking Powder
1 Egg, beaten
1 small ripe Banana, mashed
1 tsp Vanilla Extract (optional)
475g Blueberries
30g whole, skin-on Almonds
METHOD:
Heat the oven to 200°c - 180°c fan forced or gas.
Mix almond milk, organic rolled oats, almond butter, baking powder, beaten egg, mashed banana, vanilla extract and 450g fresh blueberries together in a large bowl.
Tip the mixture into a 2-litre ovenproof dish, then bake for 30-35 mins until piping hot in the middle.
Top with blueberries, almond butter, your favourite yoghurt and a drizzle of honey or maple syrup
